Sushi Cook – Luxury Resort in Corfu

About the role

Domes Miramare Corfu, a 5‑star adults‑only resort, is seeking a skilled Sushi Cook to join its culinary team. You will create authentic sushi and Japanese dishes for discerning guests, ensuring the highest standards of freshness, presentation, and taste.

Key responsibilities

• Prepare a variety of sushi, sashimi, and Japanese dishes following established recipes.
• Select, handle, and store fresh fish, seafood, and other ingredients with strict attention to food safety.
• Maintain expert knife skills, rice preparation, and traditional sushi‑making techniques.
• Ensure consistent plating, portioning, and visual standards throughout service.
• Monitor ingredient quality, flagging any concerns immediately.
• Collaborate with the Head Chef and Sous Chef on new menu items and seasonal dishes.
• Keep the sushi station clean, organized, and fully stocked.
• Mentor junior kitchen staff and share best practices.
• Adhere to all HACCP, health, safety, and hygiene regulations.

Required profile

• Proven experience as a Sushi Cook or Sushi Chef, preferably in a high‑volume or fine‑dining environment.
• Strong technical expertise in sushi preparation and Japanese cooking methods.
• Deep understanding of fish and seafood quality, freshness, and safe handling.
• Knowledge of food safety and hygiene standards; HACCP certification is a plus.
• Fluency in Greek and/or English.
