Executive Sous Chef – Luxury Hotel (Season 2027)

About the role

We are seeking an experienced Executive Sous Chef to lead the day‑to‑day culinary operations at our 5‑star MarBella hotel in Corfu for Season 2027. Reporting directly to the Executive Chef, you will translate the culinary vision into consistent, high‑quality dishes across all hotel outlets.

Key responsibilities

• Coordinate daily kitchen operations, staffing and workflow for multiple outlets.
• Supervise Sous Chefs, Head Chefs, Chefs de Partie and the wider culinary team.
• Monitor food preparation, cooking and presentation to ensure consistent quality and taste.
• Collaborate with the Executive Chef on menu development, seasonal concepts and new culinary initiatives.
• Standardise recipes, presentation guidelines and production methods.
• Coach, mentor and develop kitchen team members.
• Assist with workforce planning, shift organisation and resource allocation.
• Track food usage, stock levels, portioning and waste to support cost control.

Required profile

• Proven experience in a senior culinary leadership role within a luxury hotel or resort.
• Strong commitment to food quality, safety and operational excellence.
• Ability to lead, motivate and develop diverse kitchen teams.
• Flexibility to step into the Executive Chef’s duties when required.
