Assistant Pastry Chef

About the role

The Assistant Pastry Chef supports the Executive Pastry Chef in delivering high‑quality pastries aboard a cruise ship. The role combines hands‑on pastry production with team supervision, ensuring consistent taste, presentation, and compliance with health regulations.

Key responsibilities

• Assist the Pastry Chef in supervising pastry team members and enforce company policies.
• Coach, support, evaluate and schedule direct reports together with the Executive Pastry Chef.
• Maintain quality and consistency of pastries according to corporate recipes and visual standards.
• Set up pastry displays for buffets and teatime service.
• Ensure daily compliance with United States Public Health Rules and Regulations.
• Oversee cleaning schedules, equipment care and uniform standards for the pastry galley.
• Monitor food production, record leftovers and control waste to meet budgeted food costs.
• Prepare and submit food requisitions for the pastry shop and verify receipt, storage and transport of items.
• Participate in USPH inspections, time‑and‑attendance procedures and shipboard meetings.
• Perform any additional duties assigned by supervisors or management.

Required profile

• Minimum two years experience as a Pastry Chef or equivalent in an upscale hotel, resort, cruise ship or convention banqueting service.
• Culinary school degree.
• Strong management abilities in a multicultural, dynamic environment.
• Excellent communication, problem‑solving and decision‑making skills.
• Superior customer service, team‑building and conflict‑resolution capabilities.
