About the role

The Protocol Cook & Research Kitchen Coordinator will work in UNIC EVOLVE's research kitchen, translating scientific nutrition protocols into reproducible, high‑quality meals. This role blends professional culinary expertise with rigorous scientific precision to support controlled dietary‑intervention studies.

Key responsibilities

• Prepare meals according to detailed scientific protocols, ensuring exact ingredient weights, preparation methods, and serving conditions.
• Execute controlled food experiments and produce standardized samples for research purposes.
• Maintain complete documentation, ingredient traceability, and preparation records.
• Source ingredients, manage inventory, and uphold food‑safety and quality standards.
• Collaborate with nutritionists, clinicians, laboratory scientists, and AI specialists to implement research protocols.
• Contribute to the development and continuous improvement of standard operating procedures for the research kitchen.

Required profile

• Professional experience in a restaurant, catering, hotel, production kitchen, or private chef environment.
• Excellent organisational skills and strong attention to detail.
• Ability to follow written procedures consistently and precisely.
• Fluency in Greek and good working knowledge of English.

Required skills

• Food hygiene and allergen‑management knowledge.
• HACCP certification (preferred).
• Recipe standardisation and nutrition‑focused cooking.
• Inventory and ingredient traceability management.
