Executive Sous Chef – Luxury Hotel (Season 2027)

About the role

The Mar-Bella Collection is seeking an experienced Executive Sous Chef for the 2027 season at its luxury MarBella hotel in Corfu. Reporting to the Executive Chef, you will lead daily culinary operations, uphold the highest standards of quality, and support the creation of innovative menus.

Key responsibilities

• Coordinate day‑to‑day kitchen activities across all hotel outlets, ensuring smooth workflow and effective staffing.
• Supervise Sous Chefs, Head Chefs, Chefs de Partie and the wider culinary team, maintaining consistency and excellence in every plate.
• Assist the Executive Chef in menu development, seasonal concepts, recipe creation and standardisation.
• Monitor food preparation, presentation, safety and quality standards throughout service.
• Coach, mentor and develop team members, fostering skill growth and career progression.
• Manage food cost, inventory, portion control and waste reduction to support profitability.

Required profile

• Proven senior culinary leadership experience in a luxury hotel or resort environment.
• Strong commitment to quality, creativity and guest satisfaction.
• Ability to step into the Executive Chef’s role when required.
• Excellent communication and team‑building skills.
