Chief Steward

About the role

The Chief Steward leads the stewarding team at One&Only Aesthesis, ensuring smooth back‑of‑house operations that support the culinary team in delivering exceptional guest experiences. This hands‑on position combines leadership, coordination of kitchen logistics, and a strong focus on cleanliness, safety and service standards.

Key responsibilities

• Lead, coach and inspire a team of stewards, ensuring punctuality, proper grooming and readiness for each shift.
• Assign tasks, communicate daily events and uphold procedures set by the Executive Chef.
• Oversee opening and closing shifts, guaranteeing that all kitchen areas are cleaned, organized and sanitized.
• Manage waste removal, recycling and proper chemical usage in line with WHS standards.
• Conduct performance discussions, support staff development and handle rostering.
• Coordinate event set‑ups, equipment manoeuvring and post‑event cleaning and storage.
• Maintain clean and orderly storage rooms, walk‑in fridges and back‑of‑house areas.
• Ensure compliance with food safety standards (HCCP) and environmental policies.

Required profile

• Previous leadership experience in a hospitality or resort environment.
• Excellent communication and organisational abilities.
• Outstanding attention to detail and a proactive approach to cleanliness.
• Valid driver’s licence and ability to work hands‑on, leading by example.

Required skills

• Knowledge of food safety standards, specifically HCCP.
• Stewarding expertise, including kitchen sanitation and equipment handling.
