Pizza Chef - Senior Sous Chef

About the role

The Pizza Chef – Senior Sous Chef leads the Pizza Sapienza by Daniele Cason outlet at Mandarin Oriental Costa Navarino. Reporting to the Executive Chef, you will oversee recipe execution, dough and sauce preparation, and ensure every pizza meets the highest standards of quality, hygiene and food safety.

Key responsibilities

• Oversee daily operations of the pizza station, ensuring compliance with hotel policies and procedures.
• Prepare and manage all pizza production, including dough, sauces and toppings, while keeping workstations sanitized, stocked and equipped.
• Lead, train and support culinary team members to maintain consistency and quality in line with Executive Chef standards.
• Monitor inventory, supplies, equipment maintenance and monthly par‑stock adjustments to optimise efficiency and control food costs.
• Conduct quality‑control checks on every pizza and uphold strict cleanliness, hygiene and food‑safety protocols.
• Collaborate with the Executive Chef, F&B leadership and restaurant managers on menu development and operational improvements.

Required profile

• Valid EU passport or Hellenic residence permit.
• Globally recognised culinary qualification.
• 3‑5 years of professional experience in a similar senior pizza‑chef role.
• Computer literacy with Microsoft Office (Excel, Word, PowerPoint).
• Fluency in English.
